Healthy Chocolate Chip Muffins

I wanted a muffin I could serve for breakfast without it feeling like I was handing out dessert at 8 AM, but I also didn’t want to go so far with the “healthy” swaps that the muffins ended up inedible .. dry, dense, cardboard totally rejected by the kids.
This version hits the sweet spot. Literally.
Instead of cutting everything, I focused on balancing nutrition with flavor—making smart swaps that boost fiber and protein without sacrificing texture or taste.

Here’s what I did:
✅ Swapped half of the all-purpose flour for oat flour to add fiber and whole grains
✅ Replaced half the oil with Greek yogurt for a protein boost
✅ Cut the sugar in half and subbed in honey for natural sweetness
The result? They still taste like real muffins—lightly sweet, moist, and soft like a bakery muffin, but a slightly healthier version that keeps everyone full longer without the massive sugar crash.
🍫 Healthy Chocolate Chip Muffins Recipe
1 cup oat flour
1 cup all-purpose flour
2 tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup sugar
½ cup honey
2 eggs
4 Tb melted butter
1 cup Greek yogurt- Plain or Vanilla
2/3 cup milk
½ tsp vanilla extract - Skip if using vanilla flavored yogurt
1/4 cup mini semisweet chocolate chips- toss in 2 tsp flour before adding in to batter
👩🍳 Instructions
Preheat oven to 350°F and line or grease a muffin tin.
In a large bowl, whisk together the wet ingredients (eggs, yogurt, sugar, honey, milk, butter and vanilla). Add in the dry ingredients (flours, baking powder, baking soda, salt). I recommend using a sift for the baking powder and baking soda to prevent clumps in the batter.
When all dry ingredients are added mix just until blended — do not overmix.
In a small bowl, toss the chocolate chips with 2 tsp flour to help prevent them from sinking.
Gently fold the chocolate chips into the batter.
Scoop into muffin cups, filling each about ¾ full.
Bake for 16 minutes or until a toothpick comes out clean.
Let cool in the pan for a few minutes, then transfer to a wire rack.
📝 Notes
These freeze well! Just store in a freezer-safe bag and thaw or reheat in the microwave as needed.
You can swap honey for maple syrup or use blueberries instead of chocolate chips if you prefer fruit.
No need to purchase oat flour- just blend plain quick oats until flour form- takes 30 seconds and a portion of the cost!
